Homestyle Cornbread

Our friend John has held a number of jobs, including working for a bakery where he learned enough to start crafting his own recipes. According to John, it took him three or four tries to perfect this cornbread recipe. When you try it yourself with some butter and, if you’re so inclined, honey, you’d have to agree that’s some pretty good cornbread!

For those WoW players out there, this should take you back to the days of supping on moist cornbread as a low-level character!

Temp: 350F
Bake time: ~35min

1/2cup cornmeal
1 1/2 cup flour
2/3 cup sugar
1tbsp baking powder
1/2 tsp salt
1/3 cup oil
3 tbsp melted butter
1tbsp honey
2 eggs
1 1/4 cup milk

1.) Butter and flour an 8″ square baking dish (8″x8″x2″) and sprinkle enough extra cornmeal on the bottom of the dish to just cover the surface.
2.) Combine dry ingredients together (including sugar) and mix well in a medium mixing bowl.
3.) Beat eggs and combine with other wet ingredients, mixing well, in a separate bowl.
4.) Add the wet ingredients to the dry and stir together until mostly smooth.
5.) Pour into the prepped pan immediately and bake until the top turns a golden, caramel color and a toothpick inserted into the middle comes out clean. (If you aren’t going to bake this immediately, just prep the pan, combine the dry ingredients and do the rest when you’re ready.)
